Baby Steps, Corn Free One Meal at a Time

Finally had some success at supper with the "King Corn" Challenge...baked potato w/broccoli. Yum. But I won't be able to handle vegetarian for more than a few meals, at least not without some planning. And fake butter isn't much fun.

I did slip at lunch, had to have the Thai fried rice w/chicken. Don't know about the oils, I'm going to pretend there wasn't any corn oil. But the egg and chicken are 99.99% likely to have been part of the corn chain.

Other pitfalls:

- Non-dairy creamer.
- Thanks to Von, I now suspect that the glucose in my Halls cough drops may be corn tainted.

What corn-free fake butter did you find that's legit? I'm wondering if goat butter is corn-free...

Curt - Last I knew Willow Run Margarine was corn-free.

If you can find KerryGold butter it should be corn-free as well, though its real butter. The cows are supposedly all grass-fed.

I have Smart Balance light in the fridge. Looks like all Canola and Soy oil based.

I looked up the ingredients on the Smart Balance.. If the website I saw was correct on the ingredient list the following ingredients could be corn-derived:
Lactic Acid, Mono & Diglycerides, Sorbitan, Potassium Sorbate, Natural & Artificial Flavors, Vitamin E, Vitamin A palmitate, Beta Carottene color.

While some of these might not be sourced from corn or contain corn, the chances are pretty good that at least one or more of them is.
